One Pot Wonders

Hi Y’all!

So last week the the familia and I took a roadtrip to Texas to visit family and to attend the Austin City Limits Festival. Let me tell you, if you are thinking of taking a road trip with a child of or around 21 months of age- don’t do it!! My little one was not a happy camper most of the way. She is a very energetic child and sitting in one place for too long does not make her happy. We took plenty of toys and even played ‘catch’ back and forth (Visualize- me tossing a fairy ball into her lap and her tossing it back- yeah, a modified verion). We had some of her favorite cartoon clips. We split the trip in half and made several stops and any roadside Mcdonald’s just so she can play at the playground and strech those little legs of hers.

So, when we got back I was in no mood to labor over dinner the next few nights so it was quick and easy or one pot meals.  Below are some gems I found that may help. Don’t forget to click on the lovely images to find the recipes!

Thoughts on Blogging

I started this blogging journey because- well, to be quite frank, I would like to eventually be in the position that I may work from home and spend more time with my little girl. And to be quite honest I KNOW NOTHING ABOUT BLOGGING! So I am slowly learning.  So what do I think of Blogging? It is hard!! There is so much to learn and absorb. I spend hours searching the internet for blogging tips and learning how to actually do this stuff successfully. For example, I learned that I can post thumbnail sized pictures here on my blog of the recipes I gather into menus and it won’t get me into trouble(Copyright issues), rather than just posting the links. I think that is great because really, isn’t a picture worth a thousand words? 😉  I decided to give it shot and see whats happens.

So here we go, lets hope it works!

Wow! It has been so busy around here lately but you will not hear me complaining! My pinterest hours are down significantly but my recipe collection just keeps getting bigger and bigger.  My babydoll is entering her ‘terrible twos’ and I am kept on my toes. Anyone have any “battlefield stories” they would like to share? The other day, I was at the grocerie store and babydoll would not sit in the cart and as I was reaching into the freezer to grab something- I see her out of the corner of my eye unbuckle herself and stand completely upright and lunged at me! All in like 5 seconds! I barely caught her and set her down. Apparently, she really wanted to just get out the cart and run the aisles. Well, I was not about to let that happen so I held her hand and continued about halfway down the aisle when she just threw herself on the floor on started wailing. Not whining or like crying- I mean gut wrenching, nails down the chalkboard type screaming and I could not for the life of me figure out what to do or calm her down! I tried to pick her up and she did that straight/limp thing and people around me were just like staring- I wanted to hide and pretend she wasn’t mine! Anyway, it got so bad I finally wrangled her up and left. Didn’t finish grocery shopping. Maybe we’ll try again tomorrow.  Oh, the life and times of a mommy!

Slow Cooker Meals- Part 1

I am a big fan of my slow cooker. It helped me so much during the first few weeks of my recovery after labor and then it came to my rescue three short months later when I returned to work full time. If you haven’t  used the slow cooker before or do not even own one- go. now. to purchase. please. and if you haven’t used it in awhile- take the fruit out of it ( hah, yeah, that’s what mine was used for before! hehe) and get ready to make some pretty awesome meals. By the way, these aren’t your typical crockpot recipes.

Summer Meals

Here in San Diego, people usually envy our weather- blue skies, warm weather and palm tree swaying in the breeze… eeexceept this summer! It seems to me that this summer has been unusually milder. Dont get me wrong we had some really hot days but for the most part its been kind of gloomy all summer. Like the June Gloom never left. I thought I would put together some recipes that scream summer. Any way, in the spirit of a Cali’ Summer, here are some light summer-ish meals that I hope to make. Of course, I did throw in a slow cooker meal just in case you spent a whole day at the beach (here in sd, we have had a few!)- at least part of your meal will be done!
